Cocoa powder Dutch 1kg
Cocoa powder is a dry, chocolate-flavored powder made by grinding cocoa beans and removing most of the cocoa butter (the fat). It's the key ingredient in many chocolate desserts, drinks, and baked goods.
There are two main types:
-
Natural cocoa powder
-
Light brown in color
-
Slightly acidic and bitter
-
Often used in recipes with baking soda (which is alkaline), so they react and help baked goods rise
-
-
Dutch-processed (or alkalized) cocoa powder
-
Darker in color, milder in flavor
-
Treated with an alkali to neutralize the acidity
-
Often used in recipes with baking powder or when a smoother taste is desired
-
Cocoa powder vs. chocolate:
-
Cocoa powder is just the non-fat part of the cocoa bean.
-
Chocolate (bars, chips, etc.) contains cocoa solids plus cocoa butter and often sugar or milk.
