Traditional Duru Bulgur Salad
Ingredients
- 1 x cup of Duru fine bulgur
- 1 x cup of boiling water
- 1 x medium brown onion
- 1 x medium cucumber
- 4 x stems spring onions
- 1/2 x bunch of parsley
- 1/2 x bunch of mint
- 3 x tablespoon of olive oil
- 1 x tablespoon of Oncu pepper paste
- 2 x tablespoons of Royal Fields pomegranate syrup
- 1/2 x squeezed fresh lemon juice
- Black pepper to taste
- Cumin ground to taste
- Salt to taste
- Fresh pomegranate seeds
Method (3-4 servings)
- Place the bulgur in a large bowl. Pour boiling water over the bulgur. Cover the bowl and let it sit until the bulgur absorbs all the water and becomes tender.
- While the bulgur is soaking, chop the cucumber, parsley, mint leaves, spring onions, and brown onion.
- Once the bulgur has absorbed all the water, fluff it with a fork. Add the pepper paste, olive oil, lemon juice, and pomegranate syrup to the bulgur. Mix thoroughly until well combined.
- Add the chopped vegetables to the bulgur mixture. Season with salt and pepper to taste. Mix everything together until evenly distributed.
- Transfer the salad to a serving bowl. Garnish with fresh pomegranate seeds. Serve and enjoy!
Duru Freekeh Salad
Raw Ingredients
- 1 x cup of Duru freekeh
- 1 x cup of Duru extra extra coarse bulgur
- 2 x tablespoons of Royal Fields pomegranate syrup
- 1 x crushed garlic cloves
- 2 x tablespoons of olive oil
- 25g x of butter (optional)
Fresh Ingredients
- 200g x roasted red capsicum
- 100g x roasted pistachio kernels
- 1/2 x bunch of roughly chopped parsley
- 1/2 x bunch of roughly chopped mint
- 1/2 x bunch of roughly chopped spring onions
- 200g x feta cheese
- 1/2 x squeezed fresh lemon juice
- Cumin powder to taste
- Salt & pepper to taste
- Pomegranate seeds
- Heat 2 tablespoons of olive oil and butter in a saucepan over medium heat. Add crushed garlic and sauté until fragrant. Add freekeh and sauté until it changes colour and releases a nutty aroma. Add bulgur, mix well, season with salt, and add 2 cups of water. Simmer until all liquid is absorbed. Let cool.
- Chop roasted red capsicum, parsley, mint, and spring onions. Roast pistachio kernels if needed and crumble the feta cheese.
- In a large bowl, mix cooled grains with fresh ingredients, roasted red capsicum, pomegranate syrup, lemon juice, cumin powder, salt, and pepper. Transfer to a serving bowl, top with crumbled feta cheese, pistachio kernels, pomegranate seeds.
- Serve and enjoy!
Duru Bulgur Pilaf w/ Chickpeas
Ingredients
- 1 x cup of Duru extra extra coarse bulgur
- 1 x tablespoon of olive oil
- 1 x onion (diced)
- 3 x garlic cloves (finely chopped)
- 1 x whole red capsicum (cubed)
- 1 x whole green capsicum (cubed)
- 1 x can of chopped tomatoes
- 1 x can of chickpeas
- 1 x tablespoon of Oncu pepper paste
- 1 x tablespoon of butter
- 1 x vegetable stock cube
- Cumin powder to taste
- Mild paprika powder to taste
- Salt & pepper to taste
- Parsley (chopped) to garnish
Method
- Heat the olive oil and butter in a pan over medium heat. Add the chopped onion and garlic and sauté until soft. Add the cubed red and green capsicum and cook for 1 minute. Add chopped tomatoes and chickpeas and sauté for an additional minute.
- Add the pepper paste and bulgur to the pan, mixing well. Sauté for 1 minute, then add 2 cups of boiling water.
- Add the vegetable stock cube, cumin powder, paprika powder, salt and pepper to taste. Cook for 15 minutes, or until the bulgur has almost absorbed all the water.
- Let the bulgur rest for 10 minutes before serving to allow the flavours to meld.
- Garnish with parley. Serve and enjoy!
